I had the same problem a few months back on my 92 100CSQW.  Of course it
wasn't the sensor because even though it's not cheap, it's too easy to
replace. I eliminated the sensor itself as the problem when I disconnected
it completely and still had the same flaky temp reading.  It turned out to
be the temp display module itself ($200 or so from the dealer).  Since
replacement, it's worked fine.
