Good degreaser for engine cleaning...

I would like to get some of the muck and grime out of my engine
bay and would like to know what sort of degreasing agent I can use
when taking the motor in for a engine steam cleaning? I did this once
with this car and wound up having to leave it in the sun for an hour
to have the components dry. At the cleaners they got water onto
the distributor and there was great trouble getting the motor going
again. The cleaners claim to use a very good degreasing agent, but
knowing this damn town they're probably using dishwashing detergent...
again (normally reserved for cleaning vehicle paintwork in this
town!). So what chemicals to avoid and what to use?
