According to the Bently for my '87 5k(which covers 1984 to 1988):
CAUTION- 5000 CS Quattro ONLY:
Whenever possible, tow with front wheels off the ground. The central and
rear differentials must be unlocked during towing. Consult owners manaul
for "unlocking" information.

For automatics, life is more complicated:
If towing speed will be greater than 30mph or 30 miles:
-remove drive shaft assemblies
-remove outer CV joins from drive-shaft assemblies
-install outer CV joint in wheel-bearing housing and secure hub with nut
-install outer CV joint boot
-seal boot small opening against water and dirt
-wrap drive shafts and store in vehicle
(otherwise, auto tranny destroys itself for lack of lubrication)

However, I have no idea as to what to do with vehicles equipped with the
newer Q systems, ie, Torsens instead of "manual" locking diffs. I would
imagine that the partial-split capabilities of Torsens(I guess it's
anywhere from 10/90 to 20/80?) would mean bad news if the front wheels were
locked and the rears were doin' 60 :(
