The metal posts of the headrests go down into pastic collars that are 
on the top of the seatbacks. If you look carefully at the circumfral 
(sp?) edge of the collars, you should see a metal clip. The clip is 
not easy to remove, but I've done it. Remove the clips and then the 
headrest pull right out.

The old 100LS had a better system. There was a button on the side of 
the seat back that released the headrests so you could adjst them or 
pull them completely off the seat. VWs of that vintage probably had 
the same system
