The 4-cylinder cars have a cable-operated clutch, so there is no fluid
to replace there.  Bleeding the brake system on these cars is no different
than what you would do for other cars.  I recommend Castrol LMA DOT4
brake fluid, or you can use something like ATE Super Blue if you want
to get fancy.

Disconnect the lower radiator hose and drain out the coolant there.
You may also want to take out the coolant expansion bottle and clean it
out.

It is somewhat labor-intensive to do a complete flush, and unless your
fluid is in really bad shape, I would simply disconnect the lower hose from
the reservoir, drain it, replace with fresh fluid and leave it at that.
Use the correct fluid for your car.  Your owner's manual should state what
the correct fluid is.  For your car, it's typically ATF (Dexron II), but don't
just take my word for it.

There is no separate diff oil and trans oil in your car.  It's all-in-one.
There are two big 17mm hex bolts on the transaxle, one is a filler hole,
and another is the drain hole.  You can use a 17mm allen wrench to
remove the plugs.  Be sure you try removing the filler plug first!
If for some reason you cannot open the filler and managed to drain all
the oil first, you'd be stuck.

The correct oil level is to fill until the oil is flush with the filler hole
and begins to seep out.  Use a good quality gear oil (Audi specifies
80W90 GL4 oil, you can also use one of the good synthetics, such as Redline)

Don't let any of the fluids run down the drain: environment harzard!
Dispose of used fluids properly.
