when i got my coupe it had manual steering, sort of.  the pressure pipe
had rusted through, trashin the pump, PO;s solution was to "prefer"
manual steering, cut belt, let rest of fluid drain out.  I drove it like
that for two years.  No adverse consequences though don't tell 'em you
heard it here.

It was a pita to park sometimes though.

playing with your alignment and tires should help.  I never noticed
anything that could be called a "numb center" on Audi steering that was
set up right, but you have your preference & that's ok too.
