I think all the below mentioned Audi's have the same amount of head room,
so you may be S.O.L. in that department.  Here's a thought:  since you'll
be rallyeing this car you'll obviously be using some form of sport seat. 
Won't they be lower than stock?  Could sport seat rails be adjusted to
sit lower?  May I make another suggestion?  How about the 200's?  They
have both room and performance.  The price may be a little steep for your
budget, though, but I'm just guessing.  And the rear area isn't flat when
you take the back seats out of the Ur-Q's and 4000 series.  I'd guess
it's the same deal with the 80's and 90's.  And, yes, I'm curious why you
asked.  Are you contemplating putting in a big `ol fuel cell, or
something?  I hope this FWD Audi guy helped.  [8^)
