Ideally, it shouldn't be affected at all.

No, the offset is measured from the center of the rim. When you 
go to wider wheels, the extra width is added equally on both 
sides, provided that the offset is the same.

You can play around with offset a little to get some extra 
clearance, or to use wheels that aren't available in your 
original offset (the case with yours?). Too much change in 
offset will cause handling changes and wheel bearing problems.

This may be the source of your problems. Do you think that the 
extra 2mm will be OK? If so, see if they have ET37.
