Interestingly enough, when I first started riding bikes, I rarely rev'd
above the 2500-3000 that cars are supposed to like...

Once I'd gotten used to bikes (and high RPMs), it seemed that cars tended
to respond well to higher RPMs as well.  If you look in the back of the
manual, the speed/torque tests are often done at much, much higher revs
than people commonly drive...
