Ever since I fitted an exchange head to MB001421, the car has cruised at
one segment below "N" on the water temperature gauge, and at around 100c
to 110c on the oil temperature gauge.  Yesterday evening on the way to
and from the Area "G" meeting, it sat at "N" and 130c respectively.

My initial thought is the oil cooler thermostat.  Any other ideas?
