I race a Mazda RX2 with a Wankel rotary motor in SCCA class ITA. The 
difference in noise is partially because of the difference in engine 
configuration...the rotor sweeps the gasses around the chamber causing 
contraction and expansion. When the rotor sweeps past the exhaust port the 
gasses are expelled and scavenged and then the exhaust port faces a blank 
rotor face...No exhaust valves to seal off the chamber. That's one of the 
advantages of a rotary engine, very few moving parts.
