Which thermostat?

    Looking at Blau flyer I have, they list 3 different thermostats for my
car.  80c, 82c, and 87c.  All the same prices.  I assume the hotter the
climate the lower the temp rating for the thermostat would be better, right?
So lowest temp rating would make for a cooler engine?
    All these choices all the time, I'd be dead without this list!
