Failing to get a bite by hammering something else into the triple-square hole (torx works well), it is possible to remove the bolts with an air or hand chisel.  Not Pretty, but it works.

Set out to replace the driver's side outer CV boot on my 89 200q today...

Three of the six Torx head bolts that attach the inner CV joint to the
transimission are stripped.  The Torx heads are stripped.  Seems the axle
has been removed in the past and new bolts were not used and the Torx was
already compromised.  Joy.

Aside from any ugly approach like saws, drills, or vise grips, does
anyone have any clever ideas?

Those are not torx bolts, they are what is called a triple square.
I assume that you are using the correct tool and are just confused on the
name.
If you are actually using a torx, then that may be the problem.

If it is truly stripped, then you'll need to be creative.
Find something that that is close to fitting into the hole and hammer it in,
e.g. a large torx bit that is too big.
