Hydraulic fluid leak

I think what you are describing is also known as the "pentosin volcano".

Basically air is getting mixed with the hydraulic fluid in the pump - 
either the pump seals or the supply line from the reservoir to the 
pump is allowing air to enter then compressed by the pump.

Check those too...
