True - don't believe the stock gauge.

You don't know that unless you have modified the ECU to tell you
(though a running into molasses feeling around 5k RPM can be a hint).
I have a modified ECU with a data aquisition system that logs
when the ECU detects knock, along with ignition timing at the
time.  It will indicate knock - even down to max retard when the
engine is still knocking and the ECU is no longer able to control it
and you will not hear knock as the driver.

I only ever heard my MC knock once - when the wastegate diaphragm
split and it went way over 2 bar.
