The thermostat controls the engine temp, which would be the same.  The max cooling rate, remember, is the high-speed fan on mode, which isn't that often.  Big advantage to larger coolant volume is the storage capacity for heat; you could run at WOT that much longer before hitting hurricane mode.  Should absorb heat spikes better with larger coolant volume.  Better to add that volume within a radiator, though.  Several audi models add an auxiliary radiator for just this purpose.
