Any hardware store should have boxes of various-sized plastic caps used to 
close off openings in electrical boxes.  They also should have 
"mushroom"-style plastic covers with smaller stems that would fit into 
screw-sized holes.  I forget what that application would be used for, but I 
know I've seen both types of plastic covers.  I used some of the electrical 
box types to seal off holes in a fiberglass showerstall when changing  the 
water supply valves.
