For that amount of work, I would do it for a different car, and make 
something that doesn't even exist.  Like a 5+5 quattro (turbo!), or a 
quattro Coupe GT (I know these exist in Europe).  Something along 
those lines.  Synchro Corrado?

5kq/5ktq are cheap and available.  I would just buy one, and put 
my good parts on it.

I once went to look at a Coupe GT as a parts car.  It turned out to 
be nicer than my existing Coupe GT.  So, it became the car to 
keep, and I sold the other one.

Food for thought.  I know what it's like to get attached to a car.
