The used parts search might be tough, checking the Euro junk yards both on and off the web will be your best bet.

Probably an aftermarket air conditioner - pretty common in those days, BMW has a few like that for the 320i. (SFE)

May not be worth keeping the air if it does not work. You would probably be better off rebuilding or replaceing the compressor to be compatible w/ 134a. but $$$

There is a fan switch very similar if not identical to the later model Audi's which is located near the bottom of the radiator. You know, the 3 pin rubber booted connector. This is a thread in sensor/switch about 30mm in dia.

You probably find a shop which can either use sheets of rubberized horse hair to rebuild the seat pads, or they could duplicate the padding with foam. I rebuilt the seats on my Super 90 sedan with foam, and they turned out fine.

If the body is straight, no rust, and you get the engine stuff sorted out, maybe around $1500 or so...at least around here (CO)
