Engine Mt replacement- realign engine?

Maybe this is easy, but it sure *sounds* scary...
I'm in the middle of a front-end rebuild, and everything is proceeding
nicely according to the instructions on SJM's site and Bently (finally got
one!).
The subframe is out now, and I'm getting ready to do the engine mounts.
Am I correct is thinking that removing the engine mounts would drop the
motor on my head? The rear of the tranny is supported by a jackstand-
what's a good place to put a jackstand to support the engine?
Also: Since the rear tranny mounts are out, does remiving the engine
mounts mean I should realign the engine? Bently says that this isn't
necessary unless you pull both the motor and transmission out, but if all
four mounts are off.....
Tx, by the way, for the double-screwdriver trick on the e-brake cables.
They're loose now. I may end up having to loosen the adjuster nut to put
things back together, but managed to avoid it so far. Kudos also to TPC
and Blau for quick shipment and good service on these parts. Strano's is
trying to be helpful, and is much cheaper, but they're running into
shipping delays.
