By offset, do you mean the distance between the wheel mounting 
surface, and the centerline of the wheel?  I don't see how you can 
choose a different offset when you replace the tires, unless you 
replace the wheels too.  Do you mean the aspect ratio of the tire?

That said, I sold my 16x7.5" Azev Type A's to a 4kcsq owner, and 
they were 37mm offset, I believe.  The tires that were used are 
205/40's.  It fits well.  

That car is very low, especially in the front.  The front of the hood is 
around my knees.  I'm thinking my friend, the previous owner of 
that car, modified the strut housings as I did on my Coupe GT long 
ago, to accept Scirocco struts.  This allows the body to travel to 
the ground without bottoming the struts, limitable by bump stops.
