which way to face exhaust gaskets?

I'm using the oem german victor reinz from TPC. Oddly enough, the
package also says DANA. Meanwhile, I bought gaskets from NAPA years
ago and they were made in Germany, but the box also said DANA on it,
as well as NAPA.
They were more one sided than these ones, so install was a no
brainer. Anyhow, to add more confusion, the gaskets on my 84turbo
head were faced steel to head, but I know for a fact that the
manifold was never removed from the car. I'm going to face the steel
to the manifold and be done with it.
The job starts tomorrow morning.

I'm wondering what gaskets you all used. Were they
dealer parts? My set was a "Fel-Pro" complete head
set, but nearly every part was made in Germany. All
my exhaust gaskets fit and cleared the intake gasket
with steel portion facing the exhaust manifold. No
trimming required. Or turning upside down. (whatever
that means?).
