I had a cab extension made from oak on my Jeep pickup for years.  Could
never keep the top sealed as the wood moved from changes in humidity, so I
covered it with a piece of automotive vinyl top material.  Glued in place
with some 3M product made for vinyl tops.  Like all my vehicles, the Jeep
lived outside (the barn's full of too many wood and metal working machines)
and that top lasted through more than half the 20 years I owned the
truck.  Very easy one-time project.
