That is exactly what I do.  $120/month.  It is difficult to budget for
upgrades, etc, but I don't go wild with things such as pinstriping, and it
cuts out on niceties such as Eurolights, or at least give them a priority.
 Usually it is an "if it aint broke don't fix" basis, but when something
does break or give indications of going, then I go whole hog on a "while
I'm at it" basis.

I also do most of my own service.  I do recoup some of my costs by selling
parts from the parts cars  and some fixer uppers I have gotten for little
or nothing.  Otherwise the budget would have to be more.

$120 is a cheap car payment for three "old" Audis.

[You know, that brings up a good idea- for those of you who can
plan well financially (I know I can't), maybe the way to ease the
pain of repairing an older car is to put a monthly "payment" into
a bank account, amazing how much money would accumulate after some
time.

ING Direct or one of the other relatively high-yield savings accounts
would be a good place for the money.
