1.8T vs 2.8 V6

My experiences in test driving the 1.8T (on an '03 A4) were very similar ...
for BOTH the tip and manual.  My exact words to the salesman were "This is
totally unacceptable".  I ended up with the '03 3.0 V6 Tip for my wife.  It is
not the quickest off the line, but at highway speeds she loves getting out of
the "cluster-mucks" (toned down for the list).  It responds well while
cruising.  Her drives up the mountain during her daily commute are fun because
of the pull this car has.  Of course your $7k budget would just about cover the
downpayment on an '03!  Can't speak for the 2.8, but I did hear there is a
supercharger available for the 2.8 .... (here's one review on that:

chipping!
