Yes, absolutley, the only difference is the pistons which much have a much smaller volume due to the 20v's bigger comb chamber. Mike Pederson of S-Car Mafia fame has quite a bit of experience tuning and tweeking stroker motors, try getting in touch with him.
By far the toughest part of stroking out a Motronic Equipped 20v is dealing with the fueling demands and getting a proper management tune.
