Also inspect the oil pressure release plunger, seat and spring.

Just a couple of comments:
Depending on the oil used to rebuild the motor, it could be normal except for
the sensor.
Or the pick up screen could be partially plugged by varnish.
I think there are two sensors: one below 1.x bar and the other for above 3.x
bar.
I suspect his sender, or its wiring.
There are many schools of thought in oil...................
Thin oil is (and was in my rebuilt 200 20V avant) used for initial start up
to make sure it flows to every nook and cranny. I saw 1 bar at idle and 3 bar
max. I didn't dare go over 4000 RPM.
I changed that oil and the Mann OEM filter out for another Mann OEM and
10/40W oil and I had 5 bar at highway speeds and 2-3 bar at idle.
Interestingly, Porsches have a 1bar per 1000 RPM guideline to watch for on
their huge dials and gauges
