The reason they tell you to lock the diff is to loosen the bolts on the
inner CV. You can loosen them several ways:

The easiest is with two people. One holds the brakes while the other loosens
the bolts. You will have to turn the CV to access each of the six bolts. 

Another is to have one rear wheel off the ground while you loosen the bolts.
This will be the most tedious. Put one wheel up, and in gear, loosen two
bolts. Put it in neutral, turn to the next two, back in gear, etc. Then with
that side loosened, put the tire back on, and do the other side the same
way.

The next way would be to use the locker in place of the shifter in the last
example. Unplug the two vacuum lines (you have to anyhow to remove the
diff). Push the linkage one way to lock, the other to unlock. When they are
locked and one rear is on the ground, It works the same as putting it in
gear.

The last way is to use the E-brake to lock the rear wheels. I saved this for
last because if your car is like all my Audi's, the E-brake doesn't work :(

And finally, yes you can use alluminum washers, they work the same as
copper.
