What about your water? (was antifreeze)

For all the posturing, handwringing, wailing, moaning
and gnashing of teeth over the antifreeze, I note that
water is scarcely mentioned.
Your water provides the better heat transfer, right?
Your water is what freezes too warm and boils too low,
so we buy antifreeze to widen the temperature gap?
Me, I boil water and/or glycol mixes at work in these
big thingys called UHF TV transmitters. Always, I
mean always, the water that enters the system is
distilled...be it TV transmitter or engine fill tank.
Minerals are a problem...maybe in the EU more than in
the US...
My 2 cents, for whatever it is worth.
