I would suggest finding another shop which has staff who are more reasonable.
The shop itself should be more interested in fixing than totalling because a
body shop makes it's money on value added, IOW labour. 

Second, don't accept the insurance company's first or second offer. They have
to replace your vehicle with one of comparable value, but they assume that
most people are interested in taking the cash and upgrading so there will be
no 'apples to apples' comparison of the market value of two vehicles. Most
people aren't interested in taking the time, or shopping around, so they will
take the first cash offer.
