Actually this isn't quite what happens. What happens is that all the
refrigerant that comes through the orifice vaporizes almost
immediately, resulting in the evap being cold near the orifice, and
quite warm elsewhere. Usually the temperature sensor is near the
middle of the evap. The control system tries to control the evap
temperature to somewhere around 34-38 degrees F, and what winds up
happening is that the evap ices up in one corner.
When the system is properly charged, evaporation of refrigerant is
taking place along the whole length of the evap, and so the
temperature of the evap core is pretty even. The automotive OEMs go
to great lengths to pick the best spot on the evaporator to put the
sensor, and to figure out how to make it work as well as it can even
with a slight under or over charge.
