How to center a steering wheel...

Because of lower back problems, can I do this:
My wheels are aligned and the steering wheel is left pointing about 11:00 
o'clock.
Can I then jack up the car, put it on stands and then remove the tie rod 
ends from the struts? Unthread the end and restart the inner tie rod and the 
end , so they both have equal threads. Then center the steering wheel and 
re-adjust the tie rod end to meet the hole in the strut. Then repeat on the 
other side.

Car is a 1990 80, 2 wheel drive. type 89
Specs are:
Total Toe +10' +- 10'

Camber  -45' +- 30'

I can make the toe 0'.
I can manually set the camber Negative, but what do I use to measure.
I am going to install new ball joint this weekend. Can I set the Negative
camber without the wheel attached? Easier to accomplish working on the
ground.
