Coolant temperature light

Well if it continues to go low then yes, it's got to be going somewhere. In theory it's a sealed system, the coolant can not evaporate and does not get consumed. It can be a very slow leak and hard to find. It can also be a leaking heater core which can leak inside the cabin and soak into the matting under the carpet. It might also be an internal engine leak which sends the coolant out the tail pipe. 

At this point you should monitor the level. If it goes low again in a day you need to address it ASAP. If it takes a week or more wait until a day off work then give it a good look over or take it to somebody who can diagnose it for you.
