Dave,
Have you checked the rear suspension transverse links for
play? When these wear out, you get camber changes while cornering,
which will make the car feel very unstable.

If it only occurs at a certain speed, I would also suspect a
damaged wheel/tire or an out-of-round tire (if the tire is new).
