Here are my thoughts,

The shop said they believed you needed a new head gasket and you
authorized the repair, and paid for the "repair".

If this "repair" was un-needed, and as such did not fix your original
problem I place the blame on the shop for missdiagnosing the problem,
they should bear the financial burden. (refund of original bill)

Did they ask if they could put the ceramic seal in the engine?
If they didn't, it is an unauthorized service, and doesn't sound like a
repair but a patch to me. Doesn't sound much better than duct-taping a
leaking radiator hose. I would contact Audi and see what they think of
this product and its use. Current problems could be completely
un-related and coincidental. I don't see how something in the coolant
could cause the oxygeon sensor to fail.

I would ask for a private meeting with the owner and share your
thoughts with him. Take notes before hand and word your thoughts
carefully. You need to hav an end in mind before you meet. Are you just
wanting to vent....I think not, do you feel you were charged for a
repair that was not neccesarry and expect a refund? If so I would be
ready to make a compromise with him, maybe you pay for the actual cost
of the materials and he covers the labor. I am sure he won't like that
at all, but it's not as bad as demanding a full refund!
