Bob,

Actually I haven't installed the rears yet.  Yes, the side to side
unevenness was there before the shock replacement.  I just think 15" to
15.5" of hub to fender is excessive.  It's about 1" more than my A6 2.7T
with the sport suspension.I'm hoping they settle down a bit after I get a
few hundred miles on them.  If I would have known that they raised the ride
height I wouldn't have gotten the darn things.  Now I am thinking that with
the new wheels and tires I am thinking about getting (225/45/17) that it
will look really bad.

The car has 142k miles and hence the reason for shock replacement :)

Well Bilsteins do raise the suspension somewhat, but is it mostly in the
rear that you're seeing the problem?  If so perhaps you have the lower
spring perched flipped around on the rears.  That will make a difference
of about an inch.  Not sure about your side to side unevenness.  From
your description I gather this was present before the shock replacement.
May be sagging springs.  How many miles on the car?
