Ivan,
1.  I don't know.   Pull your panel and count them. :-)  There are  
ten on most panels lighting the instruments that are what you are  
referencing
in the link.   Why not search autohausaz for part 893 919 040 A ,  
which is a VW part # for the 2.0 W bulb, to give you a little better  
daytime
lighting. (You can use the rheostat to dim them some if they are too  
bright at night.)

They would fit some other places, i.e., odometer, but the other  
lights are bright enough, so I would leave them with orange 1.1 W bulbs.
There are other special (read expensive) bulbs for the autocheck with  
red or yellow hoods (condoms) for the appropriate malfunctions and
I think an orange base for the radio, etc., and brake/parking brake  
light.  Some black bases for something.
Then, there are bulbs in the seat belt, MIL, and airbag.  I would  
just get proficient at removing the panel rather than changing  
working bulbs
other than the ten 2.0 W bulbs that light the instruments.

2.  While you have the instrument display out, use some Stabilant or  
Caig contact cleaner and protector on the pins of every connector.  You
can get a Caig kit at Radio Shack.  Stabilant is more expensive.

3.  Probably use one of those orange bulbs you take out of another  
location.   It could be a different bulb, I don't remember for sure.

4.  Yes.  You need to be handy taking small plastic things apart  
without breaking them or losing the little pieces inside and remembering
how to put them back together.  You then need to be good at soldering  
small parts (bulb wires) on some.   The other alternative is  
replacement,
but try some contact cleaner first.

5.  Get a life !   You must have something else to do besides work on  
this car (and make me look up this stuff).  :-)  There was a section  
in the
technical information  on <www.urs4.com> that I don't find  
transferred to <www.s-cars.org>  that details removing the instrument  
panel and
repairing switch lights.
