Nick,

SCCA stock rules limit offset changes to 1/4 inch. 

Also, note rim widths are limited to as supplied by the manufacturer
for the year of the car. So, if your car is a 95.5 which came with
Avus', you're actually stuck with 16 x 7.5 if you are totally within
the rules. Fortunately, if it's a 95 or earlier, you can run 16 x 8's,
and if an UrS4, you must run with 8's.

Also see my previous post as to how rules are enforced (gets hard when
the car is
at LEAST 10 years old).

You will STRONGLY want to consider running DOT race rubber, as the
hard transitions of Autocross tends to be tough on street tires, which
try to keep
some semblance of ride quality. R-rubber tends to have stiffer sidewalls, which
will be badly needed for the the rolly-polly Miss Piggy, especially if
she's stock.
Have those tires shaved (the heavier the car, the more shaving is
needed) and heat treating, such as Tire Rack offers) will help with
tire life. Believe it or not, shaved tires will help them last much
longer in competition conditions, as the chunking and
overheating of tread blocks that would likely occur if you run full
tread depth will rapidly destroy the tires. When ordering tires, it
wouldn't hurt to talk to both competitors whom have run a similar car
(such as on the list) but the tire place you get the tires from, IF
they have competition experience.

As an aside, the S-car is fighting an uphill battle in just about any
SCCA Solo 2 class it's placed in (stock or Street Prep, don't know if
there are any Street Touring classes that will allow it) without
making it unstreetable. It's just large enough, and heavy enough that
the constant transitions of Autocross really work against it. Go, have
fun, learn to drive well, but try not to have too high aspirations, or
you'll likely be disappointed.
