Well, dynos are a great way to tune...
$200 seems a bit heavy for an hour of dyno time, but compared to the ticket
generated by a 3rd gear WOT pull to redline. Well you do the math.
I don't really feel Audi's are any harder to strap down then any German or
Jap mobile

It's a great way to tune your car and keep it tuned, add it to your mod
budget.
I would sugest to the dyno company that you will be doing 3 dyno trips and
see if they can bring the price down.

You should see some better numbers with a FMIC, you may find less pressure
drop across it and it is simply more effecient than what audi installed.

I would also suspect that the simple addition of the FMIC should net some
gains, again you may find some extra boost, and the charge air will be
cooler and alow more timing to be used without the "ping"

Them wires are thermocouples, and need special (getting easily attainable
these days) meters to read them.
The VAG-COM and Shadetree hardware / software will read the temps AT the
intake manifold with the built in sensor. No need for fancy indash meters
unless you want the bling..
