Believe it or not... one of our local UrQ guys has a 2.5 20v.  He is using the sport q EM.  Bolted on to it is a meager little 46 trim Garrett.  The power output throughout the range is downright stunning... almost violent.
 
My take is similar on a stroker.  Given the stroke options available to us, I would limit the rpm to the mid 6k range, and bolt on a fairly conservative turbo.  This would make really good power starting in the 2krpm range, and pull well through 6500 with ease.
 
IMO, a stroker isn't about peak hp... it is about area under the curve, and a flat torque curve.

That's exactly what I think about the stroker/turbo match as well, Mark.
It's all a matter of how you want to drive it...it's likle camshaft
selection in a normally aspirated car...it determines the power band and
driving characteristics.

Just my 3 cents worth here,
Part of the charm of the stroker comes from it's longer throw (crank) this
will certainly give an early tourque number. Why not complement that with a
GT30R since it will spool up like lightning with a stroker and gives some
real world killer low RPM torque. This (to me) is what the 2.5 /2.6 would be
better at, not high flying RPM. I think Dave has shown what a 2.2 can do
with the right heart, and to me that is the motor to be running at
stratisferic shift points.

I love my GT30R, but it spools a weee bit to late for my use (there I said
the key phrase... MY USE). I quess what my point is here can be sumerized as
"Use the size of turbo for your intended vehicle use", if you going to be
out on the track and what high RPM power than big is the way to go. If you
want to embarrass many cars on the road today with traffic light launches, a
well matched turbo to spool up as early as possible with out leaving you
looking for another gear is the way to go. Now if you want both I would say
get a good lawyer first so you can beat all the summons :-)
