Having done a fair amount of wiring on my sailboat, I confirm that marine wire does have much more flexibility (more, smaller conductors) than normal multi-strand wire and the wires are generally pre-tinned throughout.  This makes them much more resistant to fatigue and corrosion failure and makes soldering much easier.  I don't believe there are any insulator differences.  It is hard to go back to "normal" wire after using this stuff.
