Nice project.
I'm envious!

You can put the UFO hubs on a lathe and turn them down to mimic the front S2 hubs.
Or use UrS ones but not drive them as far into the wheel bearing.

The rears are a bit more challenging - you can use the A4 ones, but will have to deal with a different offset (45mm) than you would with S2 rear hubs...

ps> when you "touch" the rear, consider seam welding the subframe...
