It isn't much fun but can be done with the manifold in place.  I think when
I did mine the alternator was off as was the upper radiator hose.  (I also
needed to replace the plastic thermostat housing at the same time--it was
suffering the same deterioration as all the plastic bits in the cooling
system seem to undergo.)

The old hose you can cut and then work the remaining bits off the hard pipe.
Of course they won't want to come off if they've been there for 17+ years!
You might need to cut it off in little pieces, just don't damage the hard
pipe.

You'll want to make sure the replacement hose is rated for cooling system
use.  Generic fuel line hose probably won't last long-term.

Soak the new hose in hot water for a while before installing it to make it
pliable.  Lubricate the hard fittings with coolant to help the new hose slip
on.
