Hmmm.  Yes, but it would definitely be noticeable IMO.  CV Joint failure
would allow for engine revs to go up while acceleration rate would decrease
(but I'm sure you'd notice it).

If you can lock all your diffs while retesting, that may help you determine
where your slippage really is.  You didn't mention whether you can smell the
clutch (unmistakable when slipping IME).

Another one for you on the same subject.
If the clutch is not slipping - is there any other point in the drive train
that could "slip" if it received too much power - there's nothing as far as
I can see. The diffs are not limited slip - just normal or locked. So I
reckon it has to be the clutch. I guess the way to test this would be to
find a straight bit of road, lock both diffs and give it a blast. If it
slips its the clutch if it doesn't then ...I'll be back...mmm.
