Well anything will eventually turn yellow if left out and parked in the Sun.
But ideally it wouldn't turn yellow from occasional drives in the daylight
while being stored inside a garage for 99% of the time.

I just wondered aloud if one could just use a really big sheet of
Stone-Guard, or that 3M paint-protecting film product. I've seen how well it
does in crashes on friends cars, it seems like as long as it's not
total-junk optically - that putting it onto the windshield and replacing
every couple years would make for less stressful UrQ motoring.
