Finally found the problem, I didn't think it would be the intake
manifold gasket, you just never hear of that problem. One of the fat
vacuum lines, coming off the manifold has a check valve. The valve was
pressed up against the valve cover gasket, with a hole burnt through it,
massive air leak to say the least. Thanks everyone for suggestions.

Which O2 codes is it throwing? Some of them (lambda control limit
exceeded/ not reached - one of the two) can point to unmetered air
entering the intake manifold after the MAF sensor, which would point to
either a leak in an intake gasket, or somewhere in the vaccuum system on
the intake side... Have you replaced the big rubber 'donut' seal that
sits between the throttle body and the intake plenum - it's pretty
notorious? Also, I'm still interested in that big gasket that separates
top and bottom of the intake manifold, as it does run round behind the
injector pipe - a leak in the right place on that could easily be
mistaken for an injector leak...

except the one coming from the EGR valve, I suppose that could be it,
but it sounds like its coming more from the front of the engine.
This is very interesting, and I am glad I finally found a lead. It has
been throwing 02 codes, even with two different sets of brand new OEM
sensors. Codes have been cleared numerous times with VAG tool.
In addition, there are a few thick rubber hoses around the injectors,
maybe a hidden leak in one of those?
