[V8] Wheel/TIRE FITMENT

I am trying to decide on what to do for wheels/tires on my 1990 V8. I have the origonal pearl white stock rims 15x7.5 rims now. If i keep them for winter i was thinking of putting ContinentalExtremeContact tires but they only have them in 225/60/15 is this ok?? If decide to upsize to 16 or 17 inch rims what dimentions do i need? Is 5 LUG 112mm with 35 ETC Correct?? Is it the same for the bigger rims/tires?? Any help will be appreciated.
