... with twice the risk that one will fail in the first place!  Frankly,
I've never had an issue with failure of properly rated relays ... but if
you're using failure as a rationale for a solution you should also
highlight the pitfalls ...

I guess if you *must* have double relays you could use that to advantage
by getting relays that have two sets of contacts (AKA double-pole).
Rather than dedicate one relay to one light you could use one pole from
each relay in parallel to provide current to each bulb.  Now if one
relay fails you would not lose anything ... and you get you "fake out"
of the bulb monitor ...
