Thing is, replacing the rear with a universal type application will
require full custom piping as well, and since my rear muffler looks to
be in pretty good shape, I figure I can always come back to that later
when the bank account can better handle it...

Regarding the cats, I hate to go through the effort only to find the
gutted cats sound too raspy or find trouble at the inspection lane.  A
good lister has offered a used set, which may do the trick also.
