[V8] thermostats ad nauseum

Ed,

I think there are a few variables taking place in your engine that  
aren't taking place in your pot of (almost) boiling water:  Coolant.   
Acts as a lubricant for the water pump and the thermostat. Very  
important.  The other thing is that there is pushing pressure on the  
thermostat to assist it in opening due to the aforementioned pump.  At  
least those would be my guesses.  In any casse, I always try to use a  
Behr or other good quality thermostat like the Wahler.
